For fish

Ingredient Notes:
- Fish. Almost any white sea fish would work well for this recipe. Cod, sea bream, pollock, and halibut are all good options.
- Butter. Use unsalted whole butter with a fat content of 80% or higher.
- Tomatoes. Any variety of fresh, ripe tomatoes will work well in this dish. Cherry tomatoes will give the dish a sweeter taste, which also works well.
- Cheese. For this recipe, you will need feta cheese or another Greek-style cheese.
- Olives. You can use any olives you like: black, green, or Kalamata.
- Garlic. In this case, only fresh garlic will do. Dry granulated garlic will not give the desired intensity of flavor.
- Mint. It gives the dish a fresh touch. I strongly advise against omitting it from the recipe. For a variation in flavor, you can use fresh green basil, but keep in mind that it will impart a different aroma to the dish.
- Lemon. Like mint, lemon zest adds a fresh note that goes well with fish.
Let’s start cooking!
Preheat oven to 200°C (390°F).
Prepare marinade. Melt butter, add thyme leaves, white pepper, minced garlic and lemon zest. Stir.
Season fish fillets with salt. Cut the skin crosswise. Put on greased baking sheet and spread with marinade.
Bake in the oven for 12 minutes.
Meanwhile prepare the salad. Dice tomatoes and feta cheee, slice the olives.
Add olive oil and mint leaves, mix.
Serve baked fish with salad.
