- Condensed milk. Use the highest quality condensed milk that tastes good on its own. In this case, boiled condensed milk or dulce de leche is not suitable because it will give a different flavor and consistency.
- Cocoa powder. I use alkalized cocoa because it produces a deeper color and taste. Regular cocoa powder is also fine. Instant drinks like Nesquik will definitely not work.
- Butter. For best results, use unsalted butter with a fat content of 80% or higher.
- Sprinkles. These are a classic ingredient for brigadeiros. If you don’t like this option, however, you can roll the candies in chopped, roasted hazelnuts instead. It won’t be classic, but it will be a tasty variation. Coconut flakes also work well.
- Salt. In this case, it is needed to balance the flavor — with it, the candies are less sugary.
Let’s start cooking!
In a saucepan, combine condensed milk, butter, salt, and cocoa powder.
Cook over medium heat, stirring constantly, for about 10 minutes or until the mixture thickens.
Transfer the mixture to a cold bowl, then cover the surface with plastic wrap, and cool completely.
Shape the mixture into balls and roll them in sprinkles.
