- Flour. This recipe calls for regular all-purpose flour with a protein content of 10-11%. If you use a stronger bread flour, remember that it will absorb more moisture, so you will need to use a little less by weight.
- Tomato sauce. Marinara sauce or plain pizza sauce will work for the toppings. If you don’t have these sauces, you can use canned tomato sauce – just make sure it tastes good to you.
- Cheese. Low-moisture mozzarella is ideal. Alternatively, a semi-hard cheese such as Emmental works well.
- Greens. Here I use parsley. You can add or replace the parsley with green basil.
- Yeast. The recipe calls for dry yeast. If you are substituting fresh yeast, add three times as much of it to the dough as the dry yeast is listed.
Let’s start cooking.
Make the dough. Mix warm water and milk. The temperature of the liquid should not exceed 45 °C (113 °F); a hotter environment will destroy the yeast.
Pour the dry yeast onto the surface of the mixture and let stand for 3-4 minutes without stirring – this will gradually moisten the yeast and prevent it from forming lumps. Stir until yeast is dissolved. Add the salt, sugar, and vegetable oil. Add 80% of the flour called for in the recipe and begin to knead the dough. Add remaining flour as needed. The dough should be soft and smooth. It will take about 10 minutes to knead with the stand mixer.
Cover and allow the dough to rise. The dough should double in size. Depending on the temperature in your kitchen, this will take 1-2 hours.
Turn the dough out onto a floured surface, knead, and divide in half. Let rest under a towel for 15 minutes.
While the dough is resting, grate the cheese and chop the parsley.
Roll out the dough into two rectangles of about 35*25 cm sides.
Spread one layer with tomato sauce.
Cover with cheese and parsley mixture.
Cover with the second layer of dough.
Using a pizza cutter, cut the dough into 24 strips.
Stack the strips in pairs.
Then twist and stretch them slightly. Place on a baking sheet lined with parchment paper or silicone mat.
Leave to rise for 15-20 minutes while the oven is preheated to 200 °C (390 °F).
Before placing in the oven, brush the twisters with a mixture of egg yolk and milk. Bake for about 15-20 minutes until golden brown.
These twisters are most delicious when served warm.
