
Ingredients for 8 servings:

Ingredient Notes:
- Ground meat. You can choose whichever meat you like, depending on what’s available. I used an equal mixture of pork and beef. Alternatively, you can use pure ground beef or pork. Another option is ground turkey.
- Bacon. In this case, use cold-smoked bacon. Ham is also a suitable substitute.
- Onion. A regular yellow onion is sufficient.
- Garlic. I use fresh garlic in this recipe. If you prefer dried granulated garlic, you can use that instead. For the specified amount of ingredients, 1/2 teaspoon will suffice.
- Breadcrumbs. Regular fine breadcrumbs work perfectly.
As an alternative, you can use fine oat flakes at a 1:1 weight ratio. - Sun-dried tomatoes. They add an interesting accent to the meatloaf. Both store-bought and homemade tomatoes are suitable.
If you don’t have sun-dried tomatoes, you can experiment with other flavorings, such as olives, caramelized fried onions, and more. - Herbs. Choose herbs to your taste. This time, I used celery. Parsley and green basil are also good choices.
Let’s start cooking!
Cut the bacon or ham into small cubes.
Place them in a bowl with the ground meat, chopped greens, onions, minced garlic, breadcrumbs, and finely chopped tomatoes.
Combine the ingredients.
Add salt and pepper and mix well.
Form a roll. Shape the meat mixture into a log on a double sheet of foil.
Wrap it in the foil, twisting the edges to form a cylinder.
Transfer to a baking sheet and place in an oven preheated to 200°C (390°F).
Bake until done, about 35 to 40 minutes. Increase the oven temperature to the maximum setting, remove the foil from the roll, and let it brown for 5 minutes. Alternatively, brown the roll in a very hot frying pan.
Let it rest for 10 minutes, then slice and serve.
I served it with homemade curry mayonnaise.
