Pill the shrimp.
Devine: cut the shrimp back toward the tail and remove a vein.
Preheat the frying pan over medium high heat, add 1 tbsp of vegetable oil. Add the shrimp and cook for a few minutes on each side. Add salt.
Discard all fat and add sweet chili sauce. Stir and cook for 30 seconds, then remove from pan.
Blanch broccoli in salted boiling water for 4-5 minutes (if frozen, thaw before cooking). Drain.
Preheat pan over high heat and add 1 tablespoon vegetable oil. Add the broccoli and cook for a few minutes.
Cut tomatoes into 2-4 pieces, depending on size.
Dice the cheese.
Tear the lettuce with your hands and toss with 2/3 of the dressing. Arrange on plates. Add the remaining ingredients and the rest of the dressing.
Serve.
