- Ground Meat. For this recipe, I used ground beef, but ground pork, chicken, or turkey will also work well and produce delicious results.
- Onions. A standard yellow onion is perfect here. However, shallots or white onions are also great alternatives if you prefer their flavor.
- Mushrooms. Button mushrooms are the ideal choice for this dish. For a different flavor profile, you could also use oyster mushrooms or wild mushrooms. If you don’t like mushrooms, feel free to omit them from the recipe entirely – no other adjustments are needed!
- Cheese. Any semi-hard cheese, such as Gouda or Emmental, will melt beautifully in this pie.
- Herbs. The recipe calls for parsley, but you can easily substitute it or add dill and/or basil, depending on your preference.
- Buttermilk. The fat content of the buttermilk isn’t important for this recipe. You can also successfully substitute it with drinking yogurt, kefir, or even low-fat sour cream.
- Flour. Regular all-purpose flour with around 10% protein content is ideal for the batter and will give your casserole a great texture.
- Eggs. Use medium eggs, which typically weigh 50-55 grams each without the shell.
Let’s start cooking.
Finely chop the onion and garlic. Slice the mushrooms.
Heat 1 tablespoon of vegetable oil in a frying pan over medium-high heat. Add the onion and cook for 3 minutes, stirring frequently.
Add the mushrooms and cook for a couple more minutes, stirring frequently.
Add the garlic and ground meat. Cook, stirring frequently, until the meat loses its pink color, about 5 minutes. Season with salt and black pepper.
Transfer to a bowl. Add the cheese and chopped greens.
To make the batter, combine the eggs and buttermilk, mixing until smooth. Add the sifted flour, salt, and baking powder, and mix until the batter is smooth.
Spread half of the batter on the bottom of the baking pan.
Spread the filling evenly over the batter.
Spread the remaining batter on top and smooth it out.
Place the pan in an oven preheated to 180°C (355°F) and bake until done, about 30 minutes.
Remove it from the oven and let it rest for 15 minutes. Then, remove it from the pan and slice it.
