- Bananas. You can use bananas from ripe to almost black. The riper the banana, the more flavorful the blondies will be. And the darker the color of the crumb will be. 1 medium banana weighs about 100 grams, so you will need 2 bananas to make one batch of these blondies.
- Butter. The recipe calls for unsalted butter with a fat content of 72% or more.
- Sugar. The recipe calls for brown sugar in these blondies – it gives them a light caramel flavor. If you don’t have brown sugar, you can use regular white granulated sugar. They will still be delicious.
- Eggs. The weight of an egg is 50-55 g. This is a medium size egg. It is better to use eggs at room temperature.
- Flour. Use ordinary all-purpose flour with a protein content of about 10%.
- Mix-ins. The recipe calls for walnuts, but you can replace them with any other nuts – cashews, hazelnuts, peanuts, pecans, etc.
In addition to nuts, you can add chocolate chips or chopped chocolate bar – bittersweet, milk, or white – to the batter to taste. You can also add coconut flakes.
Let’s start cooking.
Mash bananas any way you like – with a blender, masher, or fork.
Add melted butter, sugar, egg, and salt. Stir.
Add flour sifted with baking powder and mix.
Add chopped walnuts to batter.
Stir. Pour into a baking pan lined with parchment paper.
Bake in a preheated oven at 160°C (320°F) for about 35 minutes.
Allow to cool completely in the pan, then remove, cut into slices and serve.
