Ingredients for 70 cookies:
Dough

Recipe:
Place the sesame seeds in a dry, cold frying pan and set over a fire. Heat and fry until golden, stirring constantly.
Transfer to a bowl.
For the batter, combine the oil and room temperature butter, egg yolk, yogurt, vinegar, salt and sugar. Beat with a mixer until smooth.

Add flour sifted with soda and knead the dough.

Form a ball, wrap in plastic wrap and refrigerate for 30-40 minutes.
Beat the egg whites until more or less smooth and lightly frothy.
Take the cooled dough out of the refrigerator and divide it into small pieces (I have 10g pieces). Form a log from each piece, then join the ends to make a ring.

Dip one side of the ring in the egg white.

Then dip in sesame seeds.

Place on a baking sheet.


Bake in a preheated oven at 180°C (355°C) for 15-18 minutes.
Repeat with the rest of the dough.
Allow the cookies to cool and serve. When completely cooled, store in a tightly closed jar or container.

Made the cookies but I substituted apple vinegar with rice vinegar and baked it for 19 to 20 minutes in my oven. My cookies were bigger hence the longer time in the oven. One thing I would add is to knead the dough longer to reduce air pockets this will allow you to roll out the snake more solidly without it collapsing. Other than that, the cookies were delicious as I remembered it from decades ago.

For the rolling, I used white sesame seeds and flax seeds. I followed the recipe exactly except I substituted the apple cider vinegar with 2 teaspoons of lemon juice because I didn’t have any vinegar.
In the end, I had 66 rings, each weighing 10 grams. Half of the rings are topped with sesame seeds and the other half with flax seeds. Thank you for the recipe, Tatyana! This is definitely going straight into my favorites!
