- Cheese: Most semi-hard cheeses work wonderfully here, such as Gouda, Emmental, or Cheddar. You can also use low-moisture mozzarella, the kind typically used for pizza.
- Ham: Any ham will do. Alternatively, you can use lean smoked pork belly.
- Scallions: These add a subtle tang and a vibrant touch of color to the scones. Feel free to incorporate other fresh herbs to taste, like parsley or green basil.
- Flour: Regular all-purpose flour with about 10% protein content is ideal for these scones; there’s no need for bread flour. If you enjoy the flavor of whole grain, you can substitute up to a quarter of the all-purpose flour with whole wheat flour. Just be aware that you’ll likely need to add a bit more liquid to achieve the correct dough consistency.
- Butter: Use cold butter with a fat content of 72% or higher for the best results in this recipe.
- Eggs: This recipe is designed for medium-sized eggs, which typically weigh around 50-55g (without the shell).
- Sour Cream: The fat content of the sour cream isn’t crucial here. As an alternative, you can use plain Greek yogurt.
- Sugar: In this savory pastry, sugar is included simply to balance the overall flavor. Use regular white sugar for this purpose.

Using a coarse grater, grate the cheese. Finely chop the ham and green onions. Mix them together.
Mix the flour with the remaining dry ingredients. Place the mixture in a food processor and add the diced butter. Process until coarse crumbs form.
Add the egg and sour cream and knead the dough.
Add three-quarters of the mix-ins to the dough. Mix well.
Form the dough into a ball and place it on a floured surface. Roll it out into a round layer that is 3-3.5 cm thick. Cut it into 12 pieces.
Place the remaining quarter of the ham and cheese on top and press down lightly.
Preheat the oven to 180°C (355°F). Place the scones on a baking sheet and put them in the oven. Bake until golden brown and done, about 25-30 minutes.
Serve warm or cooled completely.
